Harmony and balance
The Brut Réserve is a light, fine and harmonious champagne. Its blend is made with Pinot Noir, Chardonnay and Pinot Meunier from three different years, sourced from the best sites in the Champagne region.
Appearance: This cuvée, with reflections of straw yellow, stands out by the finesse of its slowly rising bubbles and its persistent and abounding mousse.
Aroma: Maturity touched with floral freshness for this cuvée that breathes aromas of fresh fruit and ripe pears.
Palate: A full and accurate flavour combined with a fine freshness and a rich bouquet bear witness to the ageing of this cuvée in the House’s traditional cellars.
Serving: The BILLECART-SALMON Brut Réserve is the ideal partner for every occasion. It is perfect as an aperitif and can be enjoyed with a wide variety of dishes. It should be served at 8°.

Intense and Attractive
Composition: Perfect harmonious blending leaving a strong dominance of "Grands Crus Pinot Noir" (70%), and completed by the elegance and the minerality of the Chardonnay, (30%). 20% of the cuvée is vinified in oak from 5 year old barrels. Extra Brut
Appearance: The yellow colour is adorned with golden reflections, underlined by a plentiful and dynamic mousse. Brilliant, crystal clear and bright, giving everything to the perfection of the wine. This cuvée stands out by the finesse of its slowly rising bubbles.
Aroma: Very beautiful intensity with a crisp and fresh character (Golden Delicious apple, citrus fruits and dried fruits). A pure and differentiating sensory development brought by brioche notes (fresh butter, warm madeleines, brioche). Refreshing and delicate complexity.
Palate: A wide range of flavours, fruits of the orchard, including fresh quince. The wine is round offering enjoyment with a powerful finish dominated by exceptional fruit maturity.
Serving: A vintage elegant in character to be fully appreciated with the best seafood, the finest hams and risotto... Serve at 11-12°.

Rarity and power
Since its first release in 1982, the BILLECART-SALMON Grande Cuvée has revealed all its character to a following of informed wine lovers. This great wine, produced from the finest sites of selected grands crus, comes into its own after spending 10 years in our traditional cellars. This cuvée deserves its title of "Grand Cru” thanks to the meticulous blend of grapes, exclusively from the Pinot Noir and Chardonnay grands crus.
Appearance: The Grande Cuvée first delights the eye with the harmony of its pale gold colour and the supreme finesse of its mousse.
Aroma: It then surprises the wine lover with its complex and highly expressive nose, a mix of ripe fruit and toasty flavours.
Palate: The flavour is fine and distinguished, gradually allowing all the power and vivacity of this great wine to enrich the palate.
Serving: Power and finesse make the Grande Cuvée a perfectly balanced wine. As a partner to life’s most special occasions, the wonderful cuvée will accompany the best dishes in the world and will reveal all its complexity when tasted at the end of the evening.

Rare and complex
This new unique Blanc de Noirs cuvée bears the name of the patron saint of Mareuil-sur-Aÿ. The one hectare vineyard has always belonged to the family and responds to the most stringent norms: a single, unbroken and enclosed plot with a complete vinification installation in situ. Its vines, planted and pampered since 1964, have developed all the qualities of the best crus.
The magic of the soil added to human skills has produced an exceptionally pure wine sourced exclusively from Pinot Noir. To enable this great wine to mature in typical single cru style, the House chooses to add very little dosage.
This cuvée, hallmarked by chalk and its alluvial soil, stands out for the complexity of its aromas combined with a surprising freshness in a great wine. It will mature wonderfully over the next 20 years.
For each vintage, there will be a limited release of between 3,500 to 7,500 individually numbered bottles, reserved for those very special moments.

A Romantic champagne
The production secrets and the vinification method of this cuvée go back to the origins of the House of BILLECART-SALMON and have been handed down for seven generations. The Brut Rosé is a blend of Chardonnay, Pinot Meunier and Pinot Noir vinified as red wine.
Appearance: Its pale and bright pink colour is adorned with warm glints of gold and its delicate slowly rising bubbles give it a persistent mousse.
Aroma: This cuvée unveils a subtle aroma leading to an elegant, delicate bouquet of fine notes of red fruits and zest of citrus fruits.
Palate: Its special method of vinification gives this cuvée a light, elegant flavour, followed by a fresh finish with a taste of raspberry.
Serving: This rosé champagne is an ideal partner as an aperitif and can also accompany a dish of wild salmon or sushi. For dessert, it will add a sublime touch to red fruit flavours.

Power and complexity
Created in 1988 as a tribute to the co-founder Elisabeth Salmon, this extremely delicate cuvée is elaborated from an equal blend of Pinot Noir and Chardonnay. They are vinified as white wine, to which some Pinot Noir from Mareuil-sur-Aÿ, vinified as red wine, has been added. This great wine emphasises the strict methods of vinification of BILLECART-SALMON
Appearance: This vintage stands out for its amazing coppery-pink glints underscored by an outstanding string of pearls and a lasting but fine and delicate mousse.
Aroma: Expressive and complex nose. Exotic wood, fresh figs, candied fruits, wild strawberry and rose petal.
Palate: Very long and complex in mouth, this cuvée impresses by its persistence. Red fruit, spicy and mint aromas.
Serving: This finely complex great wine can be laid down for 10 to 15 years and will accompany the most superb dishes, from poultry to a delicate dessert of red fruits.

Cuvée Royale Brut
The Non Vintage Brut is made from a blend of the three classic grape varieties (30% Pinot Meunier, 35% Pinot Noir and 35% Chardonnay). The appearance is a beautiful yellow with touches of gold. The bead is gentle with tiny bubbles that hint at the long ageing.
The nose is lively, with hints of citrus, followed by apple and pear, which one finds then on the palate, together with just a hint of spice. With a pleasant rounded fruit character yet with plenty of attack and a refreshing finish this is a perfect aperitif champagne.

Cuvée Royale Rosé
This cuvée is a blend of two varieties (chardonnay 25% and pinot noir 75%). It has a rose petal color and an exciting vibrant mousse. On the nose there is a very attractive red fruit character, a mixture of raspberries and strawberries and even hints of blackcurrant.
On the palate this red fruit character dominates; it is a very appealing and easily enjoyable champagne, fruity yet dry, making a perfect drink for afternoons with friends or with dishes such as pink lamb, scallops or foie gras.
